
We are so blessed to have many amazing people in our lives. We are surrounded by family and friends who support us, lift us up in prayer and love us unconditionally. It truly amazes me that the human spirit is alive and SO strong. I love the holiday season so much because I believe that it inspires people to activate the goodness that is to be found in everyone.
When Kyleigh had her first open heart surgery, a dear friend of mine, Julie (Jewels) came all the way from Utah. She flew out, stayed a whole week at our home, cleaning, cooking and taking care of my kids. We never expected Ky's surgery, even as major as it already was, to turn into such an ordeal like it did. Jewels many nights would drive to Cincinnati and take care of me and Troy after being at our house for 13 hours taking care of it and our boys. I can never tell Julie what a gem she is and how blessed I feel to know her.
One of my favorite things that she would bring with her to Cincinnati was Rolo Cookies. I always thought they just tasted so good because SHE was the one making them. They were a little extra sweet because of the love that went into them. When I was too upset to eat ANYTHING these rolo cookies were a haven for me and the nurses in the CICU. I will never forget Jewels and her Rolo Cookies... they are the stuff that legends are made of!
So.... I am releasing to the world Jewels' Rolo Cookies! I love it because it is literally THREE ingredients! Not only is she a Super mom and amazing friend... she is normal too!! LOL
This holiday season... I challenge you. If there is someone in your life who just annoys you. Someone at the doctor's office who just gets to you. Someone at the bank who you HATE to see take your deposit. I challenge you to make a batch of these Rolo cookies and deliver them to that person. Deliver them a handmade batch of cookies sealed with a little extra Christmas spirit and see how their disposition changes. Of course feel free to make about 8 dozen others for all your friends and family ... because they deserve them too!!!

I made a batch of these for the NICU team when we picked up Nathan yesterday. The were a big hit!! I had some leftover Rolos and had an evil thought... sweet/salty... everything tastes great on a Ritz. 2 Ritz crackers, 1 Rolo and 12 secs in the Microwave makes a GREAT Rolo Sandwich. I'm in trouble now...LOL

The kids were laughing and eating them and taliking about your awesome comment and how I should go to the paed and tell him "No cookies for you!"
It has become a famous catch cry in our house. Whenever someone does something to someone else's disliking, as a matter of fact.
